Ice Cream for Breakfast – Vegan

We love starting our days off with a big fruity breakfast. Fruit gives us a ton of energy, tastes amazing, and is incredibly refreshing – especially on hotter summer days.

Typically, we make big smoothies and fresh juices to get our day off on the right fruit. They’re convenient and can be easily taken on the go to work.

When we have some extra time to sit and enjoy breakfast – usually on Meg’s days off – we like to get a little bit more creative. Lately, we’ve been having fun making what the vegan community likes to call “nice cream.”

I’m sure you’ve heard of nice cream before or seen the bright, beautiful pictures of it posted on Instagram that first made us want to try it for ourselves.

What we love about nice cream is that it is SO freakin’ easy, versatile, and good for you. It can be made for breakfast, a snack, or even a super healthy dessert – all depending on what you put in it an on it.

Today, we want to share with you our favorite banana mango nice cream recipe, but feel free to get creative with it! Essentially, all you have to do it blend together frozen bananas with the additions and toppings of your choosing.

Banana Mango Nice Cream – Vegan

Serves 2

 

Ingredients

  • 3 frozen bananas
  • 1 1/2 cup frozen mango
  • Toppings of your choice – I used pepitas

 

Directions

  • Break the frozen bananas into smaller chunks and add them, along with the frozen mango, into the blender. You’ll need a high speed blender for this, like the Vitamix.
  • Blend on high while using a tamper to push the fruit down into the blade. Do this until the nice cream reaches a thick, smooth consistency without any lumps. If your blender is having a hard time, add just a little bit of water or plant-based milk at a time until it gets going.
  • Scoop your nice cream in a bowl, add your toppings, and enjoy!
